General information
Wine made from the fine red variety. It is harvested by hand in 12-kg boxes and immediately taken to the winery for entry into the selection tables. The fermentations are carried out in wooden tanks with temperature control until obtaining a good polyphenolic extraction that will provide the generous color and firm structure that are part of the personality of this wine; and lastly an aging of between 14 and 20 months, depending on the characteristics of the vintage, is carried out entirely in new French oak barrels.
These barrels from the most prestigious firms in Bordeaux (Radoux, Taransaud, Saury and Vicard) represent a significant investment in oak because, harvest after harvest, all the wine that is made in Alión will remain in new barrels that, after being abandoned for bottling will not be used by the winery again
Tasting Notes Alión
Once the wine is removed from the barrels, it will remain no less than 15 months in the stillness of the bottle, where it will finish assembling all the primary aromas of the fruit with the nuances that its delicate aging brings, resulting in a fleshy wine , complex and intense, but in which elegance plays as a differentiating element and hallmark of the winery.
