General information
Average age of the vineyard, 45 years, high density plantation. With glass pruning. Clayey soils with deep gravels. Sustainable cultivation respectful with the environment and following the natural cycles of the plant, with fertilizer and organic and mechanical tillage without the use of herbicides.
Manual harvest and subsequent manual selection of bunches at the entrance to the winery. Cluster of stemmed and unscrushed bunches in a stainless steel tank. Cold pre-fermentation maceration at 5ºC for 6 days. Controlled fermentation at 28º C for 10 days, with three
daily pumpbacks. Total maceration with the skins for 16 days.
I discovered by gravity and vertical pressing. Malolactic in Stainless. Fourteen months in Bordeaux barrels of French Oak. Racking every four months. Bottled without filtration or clarification. Traditional Bordeaux bottles, grape color of 750 ml and 1500 ml. 49 by 24.5 mm natural cork, washed and sterilized without treatment. Label on recyclable paper printed with ecological inks. Tasting notes Allende tinto
Intense cherry color with purple hues. The nose is dominated by fruit sensations (blackberry, blueberry, black fruit) over the perfectly integrated tones of aging in wood, which provide sensations of cedar and tobacco. In the mouth it is serious and lively with power and a great balance, spacious and tasty combining freshness fruity and the elegant structure of a aged wine.
