CharacteristicsAmaya Arzuaga colección
Grapes from centenary pre-phylloxera vineyards in the Ribera del Duero located in soils with additional characteristics (sandstone and alluvial soils complemented with limestone soils at high altitudes) combine their best qualities to achieve a spectacular result. When the grapes reached the optimum degree of maturity, they were hand-picked with a meticulous selection and taken to the winery in boxes of no more than 15 kilograms, where the bunches were selected to be covered with their own stalk and proceeding daily with a light treading before the beginning of the alcoholic fermentation. After the start of fermentation, in addition to treading the bunches, the necessary punching was carried out 18 days after the vatting was uncovered and the wine was placed in 14 new French oak barrels from different forests, in order to achieve the aromatic complexity that characterises it; the barrel stay lasted from mid-October 2010 until June 2012, when the wine was bottled.
