Own vineyards: Dalmau comes from Pago Canajas, a centennial vineyard in the upper-middle part of our Finca Ygay, at 465 meters of altitude. Its clayey-calcareous soil enjoys a great presence of boulders on the surface favoring the optimal ripening of its grapes. At the end of the veraison, we thinned the clusters, limiting production to no more than one kilo per plant and selecting bunches of small grain of high concentration. Grape varieties: 70% Tempranillo, 15% Cabernet Sauvignon, 15% Graciano.
Selected manual harvest in palots of small quantities ensuring that the grape reaches the winery quickly in perfect condition. The Tempranillo on September 16, the Cabernet Sauvignon was harvested on September 20 and the Graciano on September 25. Fermentation of each variety separately at controlled temperature for 11 days. Tempranillo ferments in small stainless steel tanks and Graciano and Cabernet Sauvignon in a small oak vat. We practice pumping over and delestage. 19 months in new French oak barrels from Allier.

Dalmau is a wine of limited elaboration, full in nuances and intensity, showing the most modern face of the winery. Its nose is complex, velvety, with an explosion of aromas of wild fruits, dark chocolate and mineral notes, elegantly combined with creamy toasts from its passage through the French barrel.
