Red wine elaborated with grapes of the Mazuelo variety and other autochthonous grapes. All have been selected by hand, grain by grain, using selection tables by vibration and weight. Destemmed grapes without crushing macerated in stainless steel tanks with temperature control and long intracellular fermentations. The pumping over of the musts is carried out naturally by gravity, using the submerged cap as an aid in the elaboration. To extract the wine, a pneumatic press is used, followed by new French oak barrels where the malolactic fermentation takes place.
The ageing phase lasts 14 months in new French oak barrels.
Intense red fruits with great complexity and harmony with hints of black olives. In the mouth it is unctuous, elegant and persistent on the palate. A wine really different to what BAIGORRI has accustomed us.
