Red wine made with very old visas of little production. Grapes of the Tempranillo variety selected by hand, grain by grain, using selection and vibration tables. Long pre-fermentation macerations in wooden vats that allow all the primary aromas of the grape to be extracted, and afterwards, once the alcoholic fermentation has concluded, go to the pressing phase using, especially for this wine, a vertical press.
The wines, together with their lees, are placed in new French oak barrels that are placed in special rooms at temperatures around 20 ° to carry out malolactic fermentation. At the end of this phase, all the barrels come to occupy a controlled gallery protected from the outside weather, which in the winter months is harsh, reaching in many cases below freezing temperatures.
All the barrels are regularly controlled by the laboratory personnel, with a tasting panel deciding how long this wine will remain in the barrel.
Tasting Notes Baigorri de garage
Intense cherry color, aromas of compote fruit, aromatic herbs, bread and fig. Feeling of macerated fruit, prunes, tobacco and smoked, licorice. Very tasty and round, a balance between the tannins provided by an elegant trance oak wood and that of the grapes. Very long and persistent finish.
