The grapes come from the vineyards owned by the winery in the municipality of Grávalos, south of Monte Yerga in the foothills of the Iberian Cordillera at an altitude between 700 - 800 meters above sea level. A very high area where you can get fresh wines with little alcohol content, with very fine and elegant aromas. The Viura variety is harvested in the first two weeks of
October. The harvest is done manually, selecting the grapes, avoiding any grapes that are damaged or that do not meet the quality required to make our cavas.
The flower must obtained with a soft pressing will be used to make our cavas. The must will undergo the first fermentation in stainless steel tanks at a low temperature above 14ºC. At the beginning of spring, once the wine is clean, it will undergo the second fermentation in the bottle, remaining aged for at least 36 months.
Tasting Notes Benito Escudero Brut
Lemon yellow color with steely reflections. Fine bubble that forms a small rosary of slow evolution. Fruit aromas (apple) stand out. Pleasant in the mouth with slight acidity and a well integrated bubble. Apple aftertaste.
