BRIONES, average age of the vineyard 60 years, high density plantation. With pruning in glass. Loamy clay soils with abundant gravel and stones. Sustainable cultivation that respects the environment and follows the natural cycles of the plant, with organic fertilization and mechanical tillage without the use of herbicides. Manual harvesting and subsequent manual selection of bunches at the entry to Encube of bunches destemmed and not crushed in French oak vat. Maceration
prefermentative cold at 5º C for 6 days. Controlled fermentation at 28 º C for 16 days, with
three pumpovers a day. Total maceration with the skins for 22 days. Discovered by gravity and
vertical pressing. Malolactic in barrel.
Twenty-four months in new French Oak Bordeaux barrels. Racking every four months.
