General information
VINIFICATION: Traditional preparation stemmed (100 %) Alcoholic fermentation for 9 days with autochthonous yeast selected from our own vineyards, temperature control from 28 to 32 º C. Post-fermentative maceration with the skins for 8 days. Two pumping over daily until fermentation is complete. During maceration, the frequency of pumping over is decreased as the process progresses, to avoid the extraction of vegetal and bitter characters.
AGING: In American oak barrels of 225 l. for 26 months (25 % new cask, 75 % maximum cask of 3 wines). Traiegos every 4 months the first year and every 6 the second.
Tasting Notes Sierra Cantabria gran reserva
Ruby red, showing tile notes on the rim of the glass; medium-high layer, clean and bright. Intense, fragrant, complex aroma, ripe red fruit, balsamic, vanilla, toasted and light notes of truffle. On the palate it is vigorous, fresh, silky, with a good presence of ripe tannins, developing a great balance and complexity of flavors, strongly perceiving the notes of perfectly integrated red fruit with balsamic, brown, oak and roasted notes. In the aftertaste we find it long, with memories of fruit, spices and cocoa.
