Selected harvest in 15kg boxes. Cold prefermentation for 6 days. Alcoholic fermentation in a controlled way, with the addition of autochthonous yeast selected from our best vineyards, for 20 days with daily pumping over. Malolactic fermentation takes place very slowly, without the addition of bacteria, tempering the cellar at 20ºC for 28 days. It rests for 14 months in 300l fine-grain French oak barrels. It is bottled without filtering or clarifying.
Tasting Notes payment of aging chaplains
At sight it offers us a very intense cherry color with cardinal edges. On the nose it is very frank, with aromas of ripe red fruit, balsamic touches. Its passage through the mouth is soft, filling the palate with exquisite flavors of plum and blueberry, with a long and elegant finish. Its balance and lively acidity stand out.
