The incubation lasts 11 days during which continuous “pumping up” and “punching down” tasks are carried out, to favor the contact of the must with the skins and cause a slow and natural extraction of aromas and polyphenols.
The Tempranillo was harvested on September 30 and the Mazuelo on October 7, from the selected grapes of a vintage of excellent quality in our payment

It has good depth and concentration, still young and alive with fine tannins and supported by a freshness that balances it. It will evolve for a long time in the bottle.
