During the incubation, carbonic snow is used to keep avoiding oxidation and facilitate cold maceration. Controlled and fermentation temperature does not exceed 24 ºC. Once the fermentation has begun, daily punching and two delestages are performed to extract maximum color and aromas. Total days of incubation: 21. This wine has remained 7 months in new French oak and 10 months in the bottle.
Tasting Notes Tarón centennial strains
Cherry color, garnet edge, good layer. Complex, very elegant aroma, ripe fruit, floral notes, sweet spices, liqueur, balsamic, cocoa, mineral. Powerful, tasty, round, fatty, toasted palate, good balance between fruit and wood. Ripe tannins. Retronasal fruity and with a very long finish.
