Chobeo de Peciña Blanco fermentado en barrica 2016
Produced with the utmost care, only 1250 bottles have been produced, with more than 50 years old tempranillo grapes from our Finca Iscorta vineyard. After a selection of the best bunches harvested by hand and transported to the winery in 15 kilo boxes, the grapes have been cold pre-macerated for 5 days to obtain a much more structured and complex wine. Afterwards, the wine was fermented at a controlled temperature for 15 days and remained for 2 months in 5 American oak barrels with medium toasting, where it underwent malolactic fermentation.
After a decanting racking where all the fermentation remains have been eliminated, it has remained for 10 months more in cask, making another 2 rackings to obtain a completely clean and stable wine.
This wine has not undergone any process of filtration, clarification or stabilisation, thus achieving the maximum expression of the Sonsierra terroir.

Colour: Covered cherry and violet rim. Medium-high layer.
Aromas: Primary aromas of fresh fruit with touches of bushes and pastries.
Palate: Unctuous, fleshy. Ripe, powerful and pleasant tannin, very fruity. Acidity marked with a long, spicy aftertaste.
Optimum temperature of consumption: 16º to 17º C.
