General information

This is the same area as the Prado Enea vineyards, which are high areas, but unlike these, they are hillsides facing north in order to protect the vineyards from the heat that could alter the delicate varietal aroma needed in cavas. the grapes are harvested around the third week of September. About 15 days earlier than those dedicated to white wines. The harvest has to be in boxes of 15 kilos to respect the integrity of the fruit. After passing through the selection belt, the bunches go to the press. The pressing is the most delicate moment to preserve the quality, only the must coming from the soft pressing is used to elaborate this cava. The musts carry out a first fermentation in wooden tanks of 1.000 liters to be conserved in the same ones until the end of April. From this point onwards, the second fermentation takes place in the bottle. The wine is conserved in rhyme for at least 14 more months.

Tasting Notes  Conde de Haro brut

The first impression in glass is of a very scarce oxidation; bright yellow-green tones. The foam formed in the glass is dense and persistent, giving an idea of its structural composition in the mouth. Observed the interior of the glass we discover a microscopic bubble rosary ascending freely to the surface. In nose dominates the character of acid fruit and flowers. In a second level we find fermentative characters and those of the transformation in bottle (honey, vanilla, liquor). In mouth it is sweet but fresh at the same time thanks to its great acidity. The combination of fruit/acidity/fine lees causes a surprising sensation of fullness in the mouth that invites to continue tasting. On the aftertaste, the fruits return this time with a greater dominance of spices that leave a pleasant memory for a few seconds for the taster. their consumption is completely satisfactory at this moment although, due to the characteristics of the vineyard, this cava has a great potential for ageing.
