Payment wine of limited elaboration coming from an own centenary vineyard. A reflection of the most modern side of Marqués de Murrieta, a rigorous selection of its grapes followed by a meticulous extraction and aging of a year and a half in new French oak barrels give it a harmonious and intense character.
Dalmau is a wine of limited elaboration, full of nuances and intensity that shows the most modern face of the winery. Its nose is complex, velvety, with an explosion of wild fruit aromas, dark chocolate and mineral notes, elegantly combined with creamy toasts from its passage through the French barrel. An elegant and out of the ordinary wine that impresses extraordinarily in all senses, full-bodied and very harmonious. Of magnificent balance to make fluid a powerful wine.
Own Vineyards: Dalmau comes from Pago Canajas, a hundred-year-old vineyard in the middle-upper part of our Finca Ygay, at an altitude of 465 metres. Its clayey-calcareous soil enjoys a great presence of pebbles on the surface favouring the optimum ripening of the grapes. At the end of the veraison we thin the bunches, limiting the production to no more than one kilo per plant and selecting bunches of small grain of great concentration.
Grape Varieties: 70% Tempranillo, 15% Cabernet Sauvignon, 15% Graciano.
Manual Harvest: Manual harvest selected in palots of small quantities ensuring that the grapes arrive quickly to the winery in perfect condition. Tempranillo on 16 September, Cabernet Sauvignon on 20 September and Graciano on 25 September.
Vinification: Fermentation of each variety separately at a controlled temperature for 11 days. Tempranillo ferments in small stainless steel tanks and Graciano and Cabernet Sauvignon in a small oak cask. We practice pumping over and delestage.
Aging process: 19 months in new French Allier oak barrels.
