General information
The grapes come from the vineyards owned by the winery in the municipality of Grávalos, south of Monte Yerga in the foothills of the Iberian Cordillera at an altitude between 700 - 800 meters above sea level. A very high area where you can get fresh wines with little alcohol content, with very fine and elegant aromas.
The Chardonnay variety is harvested on the second or third week of September, in the case of the Viura we make it the first two weeks of October. The harvest is done manually, selecting the grapes, avoiding any deteriorated grapes or those that do not meet the quality required to make our cavas from reaching the press, only the flower must obtained with a gentle pressing,
will be used to make "Dioro Baco". The must will undergo the first fermentation in stainless steel tanks at a low temperature above 14ºC. At the beginning of spring, once the wine is clean, it will undergo the second fermentation in the bottle, remaining aged for at least 24 months.
Tasting Notes Dioro Baco brut
Light gold color with greenish reflections, good effervescence with elegant flow of fine and persistent bubbles. Intense and fresh aroma, notes of fine wild herbs and ripe fruit. Fresh, fruity, elegant and with a fine nose.
