Wine made with red grapes of the Garnacha variety planted between 1915 and 1940 offering a very low yield per hectare. These grapes have been harvested by hand in 15 kg plastic crates.
The grape harvest is selected bunch by bunch using a selection table. The grapes then pass through a destemmer-squeezer until they reach the truncated cone stainless steel tanks.
A cold pre-mentation is carried out during 5 days to extract the maximum fruit aromas. Fermentation controlled at 24º by means of shirts and manual poking to immerse the hat and extract polyphenols for a good ageing. During the pressing phase, a manual vertical press is used. Malolactic fermentation in cask.
The ageing is carried out in new oak barrels of different origins such as French, Hungarian and American for a minimum period of 16 months until it is matured in the bottle.
