Fermentation with indigenous yeast in oak deposits. Aging for 26 months in barrels made with selected oaks in our cooperage. Prior to bottling, clarification with fresh egg white is carried out. Once in bottle will undergo a refining process for twelve months in our warehouse, at least.
We find one of those vintages that are friendly from the beginning without diminishing even a bit of guard capacity.
These wines surprise for their savory from the beginning, the apparent precocity in the integration of the tannins, for the freshness of their “Atlantic” descriptors that are interwoven with the maturity of the “Mediterranean” character.
As for the descriptors we find fruit in season, without getting to pass, mainly frutillos and plum, we continue with balms, especially licorice and mint, and just at the end, we can see spices like pepper, cloves and vanilla. In retro-olfaction, spices such as tobacco and vanilla gain in whole. Then, lactic notes, very subtle, and noble leathers flow. Everything in perfect harmony and integration. The mouth is friendly, there is sweetness of fine lees, pastries and noble tannin.
