WINE MAKING AND AGING: After the manual harvest in boxes and its passage through the selection tables the grape was destemmed passing to stainless steel tanks of 15,000 kg. Fermented at 29º C. Temperature control, analysis, pumping over and daily tasting of the musts decided the moment of devatting, taking place 21 days later in order to achieve the maximum extraction of aromas and colour, thus preparing the wine for its long and painstaking ageing. 22 months of new French barrels, with frequent racking and filling, optimal conditions of hygiene, temperature and humidity, without trepidation, in silence, give this wine a complexity, roundness and harmony that make it different. After bottling, the wine has rested in our bottle racks for 15 months, with controlled temperature and humidity until the moment of labelling.
MARIDAJE: Good companion for hunting, red meats and veal. Serving temperature: 16-18ºC (60,8-64,4ºF).
