Manual harvest. Each variety is vinified separately in such a way that depending on the variety, the estate and the characteristics of the vintage, the cold maceration times prior to pressing as well as the fermentation conditions are modified. After fermentation, a brief ageing is carried out on lees for four months after which the different estates are assembled and bottled. The wine remains in the bottle for two months before being marketed.
Tasting Notes Nivarius blanco
Clean and bright with a straw yellow color with reflections of the same color. The nose is fresh, complex where aromas of white stone fruit with floral backgrounds dominate. In the mouth it has a dry entrance, with a balanced fresh mouth step that invites to continue drinking.
