Manual harvest. Each variety is vinified separately in such a way that depending on the variety, the estate and the characteristics of the vintage, the cold maceration times prior to pressing as well as the fermentation conditions are modified. After fermentation, a short aging takes place on the lees for four months, after which the different farms are assembled and bottled. The wine remains in the bottle for two months after its commercialization.
Tasting Notes Nivarius white
Clean and bright with a straw yellow color with reflections of the same color. The nose is fresh, complex where the aromas of white stone fruit dominate with floral undertones. In the mouth it has a dry entry, with a balanced fresh passage through the mouth that invites you to continue drinking.

General informationVillabuena de Álava, where part of the family was already linked to the world of viticulture, was the chosen town where an innovative winery was built and focused on the production of quality wines. Castillo Ygay Blanco Gran Reserva Especial 1986
Own vineyard: The grapes with which this wine is made come from the Pago Capellanía, planted in 1945 and located in the highest area of our Finca Ygay at 485 meters of altitude. Rioja Alta.
Grape varieties: 97% Viura, 3% Malvasía.
Manual Harvest: It started in the first days of October, with a slow and progressive rhythm. The weather conditions so advised and helped the optimal development of the grape as well as its optimal moment of maturity. The Viura variety, with a large cluster and small grain, was the first to be harvested. With 13.5% graduation and a high acidity content.
Vinification: The entire bunch was crushed and subsequently pressed in a vertical double-screw wooden press. Its fermentation was carried out in American oak vats.
Parenting Process: 252 months in American oak barrels (225l).
Deposit time: 67 months in concrete tank.
Bottling date: January 29, 2014.
