Manual harvest. Each variety is vinified separately in such a way that depending on the variety, the estate and the characteristics of the vintage, the cold maceration times prior to pressing as well as the fermentation conditions are modified. After fermentation, a short aging takes place on the lees for four months, after which the different farms are assembled and bottled. The wine remains in the bottle for two months after its commercialization.
Tasting Notes Nivarius white
Clean and bright with a straw yellow color with reflections of the same color. The nose is fresh, complex where the aromas of white stone fruit dominate with floral undertones. In the mouth it has a dry entry, with a balanced fresh passage through the mouth that invites you to continue drinking.

General informationNovelty and tradition merge into the new 200 Monges white reserve, the quiet fruit of our work, a white reserve, a Rioja with capital letters, a 200 Monges that will last on your palate and in your memories. Make a hole in your life and take a journey through the senses. From the manual selection of grapes from our oldest and least-produced vineyards, we make this reserve. Fermentation in new barrels at 14ºC for 26 days. The process continues with an aging of 14 months in French and American oak barrels and 24 months in storage. Subsequently, the wine is bottled to let it rest in our cellars until it is released to the market. Its aromas of dried flowers, ripe fruit and wild herbs stand out. It is shown on the nose, warm, with toasted notes and creamy oak. The palate is meaty, powerful, tasty and spicy with a very elegant finish.

General informationOrigin Paradise exists, and it is found inside a bottle of wine. Libalis is an enveloping tropical explosion that transports you to the wilder side of life. Because the most brutal moments are not born, they are made. Libalis is your passport and you decide who travels with you and where. Make it worthwhile Varieties: Moscatel de Grano Menudo. Vineyard: Organic viticulture vineyards planted in 1999 at Finca Zarcillo and Finca Mejorana (Calahorra). Lands with a lot of salinity and concentration, and few kilos of grapes per hectare. Harvest: Automatic and at night during the first week of September. Preparation: Cold maceration of the grapes for 6 hours. Fermentation at 16ºC in stainless steel tanks, once the wine is at 5.5º of alcohol, it is cooled to a very low temperature, stopping the fermentation and thus leaving a sweetly fruity wine with natural carbon dioxide. When bottling, a light touch of carbon is added to give it the desired bubbly point. Grade: 5.5% Vol.

General informationWarm and dry end of autumn. Exceptionally cold and rainy winter which causes deep water reserves to accumulate. Low temperatures last until mid-April, causing a late budding in the third week of April. The second half of April and May pass with warm and sunny weather, dotted with abundant rains. Flowering occurs in mid-June with hot and dry weather. July begins with cool weather and some storms. The rest of July and August, dry weather and mild temperatures and cold nights. I vera in the second week of August.

General informationThis wine is the result of the selection of four grape varieties, Viura 70%, Malvasia 20%, Garnacha Blanca 5% and Moscatel 5%. The harvest has been carried out manually in 15-kilo boxes. Crushed, drained static and pressed without pressure, removing and separating the yolk must. The stripping has been carried out cold and in stainless steel tanks between 8 and 10ºC, with peculiar maceration, thus extracting a good part of the aromatic fraction. Alcoholic Fermentation, in stainless steel tanks, the remaining 80%, is finished in new French and American oak barrels for about 45 days with daily "batonage". Its period of alcoholic fermentation and its stay in barrels is about 4 months .
Tasting Notes Cueva del Monge white
Golden yellow color with greenish reflections tones. Aromas of dairy toasts, pineapple fruit, ripe mango, litchies, light notes of banana and frank. Fresh and creamy on the palate, glyceride, with great structure and balance, sensation of ripe fruits, pear, banana, pineapple, applesauce. Long and elegant aftertaste, light toasted with a balanced balance between wood and fruit, with a very pleasant evolution of aromatic complexity from the result of its aging.”
