Cold pre-fermentation maceration for approximately 72 hours. Fermentation in stainless steel tanks for 9 days at a controlled temperature between 26-28ºC. Postfermentative maceration for maximum color extraction for an additional 2 days. Malolactic fermentation in a selection of 30 new French oak Bordeaux barrels from 8 different coopers.
