Selected harvest in 18 kg boxes that are cooled to 5º C for 12 hours before being processed at the selection table.
Elaboration with 40% of whole grapes selected and treaded in a traditional way. The rest are destemmed and crushed.
Cold pre-fermentation maceration after which the grapes ferment with their autochthonous yeasts. The work with the hat is carried out without the use of pumps by means of punching.
Malolactic fermentation in 225 L French oak barrels. After an ageing of 10 months, it goes on to 2500 L fudres for 7 months after which it is refined in concrete tanks.
