Selected harvest in boxes of 18 kg that are cooled to 5º C for 12 hours before being processed at the selection table.

Pre-fermentative cold maceration after which the grapes ferment with their native yeasts. The work with the hat is done without the use of pumps by punching.
Malolactic fermentation in 225 L French oak barrels. After aging for 10 months, it goes to 2,500 L fudres for 7 months, after which it is refined in concrete tanks.
