Ramón Bilbao aging After the separation of grapes by payments, the temperature is controlled up to 28-29º. You discover they are fast, when it is appreciated that the color extraction reaches the optimum levels. Aged in American oak barrels.

General informationI am a farm wine made in limited production during the excellent harvest years. The Florentino Martínez family brings me to the world with the best Tempranillo grapes from their “Carasol Valdemerque” farm. They make me by the traditional method of de-stemmed grapes. Macero and ferment in tank for 25 days at controlled temperature. Two months later I am already sleeping in Rioja oak barrels, coming from the Distercios mountains, near the winery. My dream, with two racking, lasts 24 months. Finally I move to the glass where I rest and refine my bouquet for one, two or three years.
Tasting Notes Distercio reserveMy appearance is an intense maroon color, with a good coat and cherry-colored trim. I release aromas of Rioja, red berries, licorice and spices of my dreams in wood. In the mouth I am fleshy, with persistent structure and tannin, fruit and toasted notes of good intensity. With the passage of time and a slight aeration you will enjoy more with me, always at a temperature around 17ºC.

All have been selected by hand, grain by grain, using selection tables by vibration and weight. De-stemmed unscrushed grapes macerated in stainless steel tanks with temperature control and long intracellular fermentations. The pumping of the musts is carried out naturally by gravity, using the submerged hat as an aid in the elaboration. For the final extraction of the wine a pneumatic press is used, then passing to new French oak barrels where malolactic fermentation takes place. The grapes come from the oldest vineyards between 80 and 100 years old from the “Cuesta la Reina” estate owned by the family for four generations. The manual harvest was carried out in the month of October. No pumping system was used in the process, only gravity to avoid damaging the fruit.
The fermentation was carried out in stainless steel tanks with native yeasts from the vineyard itself, controlling the temperature at 30ºC. The total duration of the maceration was 32 days. Once uncovered, the wine was transferred to French Allier and Romanian oak barrels, where it was racked 5 times. It was bottled in June (2 years later), remaining in the bottle for 12 months before being put on sale.

Very covered cherry red color. Fine aromas and elegant creamy toasted aromas and ripe fruit, with a lot of expression and complexity. In the mouth it is powerful, fleshy and round, very rich in nuances, complex and elegant aftertaste.
