Manual harvest in 12 kg boxes of grapes from vineyards with an average age of 60 years. Subsequently, the grape is placed in a cold room (4-6 ºC). Selected on tables and elaborated with the flower must (of grape without pressing) extracted by means of a rotor tank.
The wine has been kept on its lees for 8 months of aging in new barrels. Batonnage (lees work) is practiced to achieve greater complexity by turning the barrels.
Tasting Notes Remirez de ganuza blanco
Pale and bright yellow color. On the nose it is subtle, fragrant, delicate and mineral, with fresh notes of aromatic and menthol herbs, stone fruits and citrus. The palate is tasty, with volume, silky, fine and mineral structure. Long and fresh finish.

General informationCampillo was born from a dream, to create a winery surrounded by vineyards, thus transferring the concept of Château to the land of Rioja. An architectural space that opens up to the Sierra Cantabria and Laguardia. Going up its grand staircase and passing through its doors, you will feel everything that led Julio Faustino Martínez to share, from Campillo, his two great passions: wine and architecture. Framed by a large vineyard stands the Bodegas Campillo building, made of natural stone, with a portico with seven semicircular arches, wooden cantilevers and ashlar masonry, its large slate staircase makes it rise to contemplate the perfect fusion between vineyards and architecture. Its interior combines tradition and modernity, luxury and sobriety, harmonizing the nobility of stone, steel, granite, slate and wood with a careful and unique aesthetic. From the great hall you can see the five levels into which the cellar is divided, structured by the spiral staircase, connecting axis of all the spaces. To the beauty in the architectural forms it combines the best technical conditions for the elaboration and aging of the wine.
Tasting Notes Campillo blancoBright clean. Delicate yellow color with green highlights. On the nose it is complex, with floral notes and ripe fruit, with well-integrated nuances of wood. On the palate it is smooth, with a fresh touch of acidity. Long finish.

This wine comes from a research project in which a new production method is experimented with the sole purpose of achieving a white wine with a much longer life. The
oxygen in a controlled way before the racking, in order to lower the concentration of oxidizable tannins in the must and reduce subsequent oxidations in the wine. In this way, white wine will have a positive evolution in the bottle and its life will be much longer. The fermentation was carried out in 225-liter American oak barrels and was in contact with the lees until April, carrying out the batonnage operation every day. It was bottled the first week of June.
