III. VINEYARDS and vendimia:Ubicados in the South of Mount Yerga, the Finca Cuesta de la Reina is a caralsol slope that begins the 450 meters above sea level and climbs to 800 meters. Its soils are clayey-calcareous, poor and with abundant boulders, is an estate of more than 120 hectares that belongs to the family from four generations ago and that has been always cultivated the vineyard. Average age of vineyards 40 years. After a meticulous track of the vineyard, the grapes are harvested at the optimal time of maturation. The variety tempranillo was harvested the first half of October, the garnacha in mid-October and the Carignan the last week of October and first half of November. The harvest is made manually, by selecting healthy and ripe grapes, rejecting the raw and damaged.
IV. WINEMAKING: Fermentation is done in stainless steel tanks
and with native yeast. Once finished fermenting is macerated for at least 10 days. Breeding is done in American oak barrels with a mean of 5 years old and remains in them at least 18 months. During this time, three rackings are done. Clean once the wine is bottled, remaining in bottle before going on the market at least for 28 months.
V. tasting red tile good coating. Clean, complex and intense nose, aromas of red fruits well coordinated with the breeding, balsamic, spices (pepper), tobacco and leather. Good structure, rich, broad, soft but with character and a good harmony in their flavors. Complex and clean finish.
VI. Recomendado:jamon serrano and Iberian cuisine. Cheese cured, red meats, game stews and roasts, wingshooting.
