Vetiver White verdejo 2016
The ripening process has been correct, although the year has been excessively dry with low rainfall, which has caused a decrease in the volume of harvest, but with very good quality in the fruit obtained.
Mechanized nocturnal harvest the second week of September, entering the grape in the cellar, fresh and healthy.
A small cold maceration of about 4 hours is carried out. Subsequently, a static sedimentation at low Tª is made, and later alcoholic fermentation at 15º of Tª with selected yeasts by the winery itself. In this type of wine malolactic fermentation is not carried out.
Crystal clear and bright, it has a yellow straw color, with greenish reflections.
The nose is clean, with intense fruity nuances and typical of the Verdejo variety.
The palate is fresh, balanced, unctuous and sweet to the attack. It is long in the mouth with a slightly bitter finish, characteristic of the Verdejo variety and which it usually offers in this area.
Indicated for appetizer and accompany with seafood, white and blue fish, pasta and white meats.
It also perfectly accompanies soft, smoked cheeses and ham.
