II. GRADE alcoholico:14% Vol.
III. Crianza:10 months in French oak barrels.
IV. ELABORATION: The grape comes from payments “Cost the Queen” property of the winery with vineyards of 80 years of age average. Manual harvest is conducted in the month of October. In the process any pumping system, single gravity was used to prevent damage to the fruit. The fermentation took place in stainless steel tanks with indigenous yeasts of the own vineyard, controlling the temperature. The total duration of maceration was 32 days. Once racked, in December, the wine became French Allier oak barrels and Romanian oak was where racked on 5 occasions. Bottled in June (2 years later), remaining 12 months in bottle before sale.
V. Red tasting cherry very covered. Intense aroma with notes
of ripe fruit, spices, Balsamic and wood well assembled. Meaty and flavorful on the palate, well balanced and tannic. Long finish, nuanced with predominance of ripe fruit and notes of ageing.
VI. RECOMMENDED dishes: will perfectly accompany cured cheeses, beef, roasts, hunting, major and minor, rabbit, Partridge, wild boar, deer or roe deer and even meats in sauce with spices.
