Manual selection of grains with botrytis cinérea. The selected grape is macerated pre-fermentatively for 12 hours. Afterwards, the wine is pressed and fermented in very slow barrels at cold temperatures for 2-3 months.
It is aged for 6 months in French oak barrels.
Pleasant, fine, frank aromas of ripe and healthy fruit, hints of wilted flowers and hay, medium power. Very good on the palate, smooth, with moderate sweetness well balanced with acidity.
Perfect for don foie gras starters, desserts made with milk or fruit. Strong blue cheeses.
