General information
Selection of vineyards belonging to the terroirs of Briones, San Vicente, Alesón (Finca San Antón), Villamediana, Agoncillo and Tudelilla, spread over 20 plots of different altitudes, soils and orientations. Manual harvest.
All the grapes remain in a cold chamber for 36 hours before processing on the selection table. The harvest began at the beginning of October, in the case of Tempranillo, and midway in the case of Graciano and Maturana Tinta.
After a gentle crushing, the must is gravity-packed in small French oak vats where it ferments and macerates in contact with the skins at a maximum controlled temperature of 28 ° C, receiving slight pump-overs for 20 days.
