This wine is the result of the selection of three grape varieties: Tempranillo 85%, Graciano 10% and Garnacha 5%. The harvest was carried out manually by own personnel, selecting all the bunches first in the vineyard and then on the selection table in the winery.The selected bunches were subjected to mechanical destemming in a stainless sieve and soft squeezing using rubber rollers to break the grain. .
Fermented in “Allier” wooden vats for 11 days at a temperature between 24º and 28ºC, it remained in the presence of the skins for another 20 days, obtaining a structured wine with noble tannin that will give a long life to our wine.
Aged for 18 months in new French and American oak barrels, it remained in storage for a few months until bottling, and afterwards, before leaving the market, remained for 18 months resting in our bottle rack.
Tasting Notes 200 Monges reserve
Cherry red color, garnet edge. Aroma of red fruits (cherry, raspberry). Very fine oak, coffee, chocolate. Powerful, spicy, tasty, complex, balanced, long and persistent palate. It is advisable to uncork and decant between 30 and 45 minutes before, in order to appreciate its full aromatic potential. 54,680 bottles of 0.75l, 1,200 magnum have been selected from this wine of 1,50l and 120 double magnum of 3l.
