General information
Red wine made with bunches of grapes of the Tempranillo variety. Only old vines are used for this wine, with a reduced production.
Selection by hand, grain by grain, using selection tables by vibration and weight. Crushed destemmed grape. Long and controlled macerations applying temperature regulation in wooden vats. Natural pumping over by gravity and pigeage for the best extraction of polyphenolic compounds. The pressing is carried out with pneumatic presses, subsequently carrying out malolactic fermentation in new French oak barrels. At specific times, cold-heat rooms are used to help both in the malolactic fermentation process as in wine stabilization. The aging phase lasts 18 months in new barrels and the rest in the bottle.
Tasting Notes Baigorri reserve
Intense cherry red wine with a high robe, aromas of black fruit and compote, spices, dairy and a long aftertaste. The palate is elegant and very balanced. Long and intense finish, persisting on the palate.
