Geological characteristics: Château Pavie is characterized by a great diversity of terroirs; It is interesting to locate the vineyard: - Terroir corresponding to the Saint-Emilion limestone “plateau”, located about 85 meters from the Dordogne level, composed of clay-calcareous soil above the limestone with asterias. Terroir corresponding to the group called “ mid-coast ”located approximately 55 meters above the level of the Dordogne, composed of a brown clay-limestone soil with a fine texture.

It is adapted to the strict potential of the harvest. Twenty thermoregulated wooden vats welcome the harvest over a three-week vat period. Malolactic fermentation in barrels. Aging in barrels, according to vintage from 70% to 100% new wood, from 18 to 32 months.
