General information
BRIONES, vineyard average age 60 years, high-density plantation. With glass pruning. Loamy clay soils with abundant gravel and stones. Sustainable cultivation respectful with the environment and following the natural cycles of the plant, with organic fertilizer and mechanical tillage without the use of herbicides.
Manual harvest and subsequent manual selection of clusters at the entrance to Encube of stemmed and unscrushed clusters in a French Oak tub. Cold pre-fermentation maceration at 5ºC for 6 days. Controlled fermentation at 28º C for 16 days, with three pumping over daily. Total maceration with the skins for 22 days. Discover by gravity and vertical pressing. Malolactic in barrels. Twenty-four months in new French Oak Bordeaux barrels. Racking every four months Bottled without filtration or clarification
Calvary Tasting Notes
Intense purple red color. Powerful and elegant on the nose, with great aromatic complexity (compotes, minerals, menthol, spices, coppice, toffee and cocoa). Great harmony in the mouth with very marked sweet tannins, very complex and full of black fruit flavors, raisins, licorice, coffee, ink and aromatic herbs. Long and persistent finish in the mouth. Great aging wine.
