Wine made with red grapes of the Tempranillo variety planted in 1905 and 1920. These grapes have been harvested by hand in 15 kg plastic crates.
The grape harvest is selected bunch by bunch using a selection table. The grapes then pass through a destemmer-squeezer until they reach the truncated cone stainless steel tanks.
A cold pre-mentation is carried out during 3 days to extract the maximum fruit aromas. Controlled fermentation by means of shirts and manual swizzling to immerse the hat and extract polyphenols for good ageing. During the pressing phase, a manual vertical press is used. Malolactic fermentation in cask.
The ageing is carried out in new oak barrels of different origins such as French, Hungarian and American for a minimum period of 18 months until it is matured in the bottle.
