Elaboration: The harvest is done manually, using small trailers of 1,500kg. Due to the proximity of the winery, the transport time is minimal, thus avoiding oxidation.
Once in the winery, the grapes were destemmed and gently pressed, then the must was cooled to 14ºC and left for 48 hours, at which time a settling was carried out to clean the must.
The fermentation was carried out at a controlled temperature, starting at 14ºC and ending at 17.5ºC, a process that lasted three weeks. After this process, the wine was sulphited but was kept on its lees for a month, obtaining a greater volume in the mouth, at which time it was racked and cold stabilized to be bottled.
Tasting Notes Muñarrate
Bright, straw-white color Nose: Fresh, intense. Without moving, hints of freshly cut hay, when moving, nuances of fennel and laurel appear, with a mineral background, accompanied by hints of citrus.
Mouth: The first impression is of kindness, unctuous, glyceric, with multiple flavors of white fruit, pear. The aftertaste is happy, with a refreshing finish.
