VINIFICATION: Traditional production with stalks removed (100%) Alcoholic fermentation for 9 days with selected indigenous yeast from our own vineyards, temperature control from 28 to 32 º C. Post-fermentation maceration with the skins for 8 days. Two pumpovers a day until the fermentation is finished. During the maceration, the frequency of pumping over is reduced as the process progresses, to avoid the extraction of vegetable characters and bitterness. AGING: In American oak barrels of 225 l. during 26 months (25 % new barrel, 75 % maximum barrel of 3 wines), racking every 4 months in the first year and every 6 months in the second.
Tasting Notes Sierra Cantabria gran reserva
Ruby red, showing brick notes on the edge of the glass; medium-high layer, clean and bright. Intense aroma, fragrant, complex, ripe red fruits, balsamic, vanilla, toasted and light notes of truffle. In the mouth it is vigorous, fresh, silky, with good presence of ripe tannins, developing a great balance and complexity of flavors, perceiving with force the notes of red fruits perfectly integrated with balsamic touches, coffees, oak and roasted. The aftertaste is long, with hints of fruit, spices and cocoa.
