Elaboration: The harvest is done manually, using small trailers of 1,500 kg. Due to the proximity of the winery, the transport time is minimal, thus avoiding oxidation. Once in the winery, the grapes were de-stemmed and gently pressed, then the must was cooled to 14ºC and left for 48 hours, at which time a settling was carried out to clean the must. The fermentation was carried out at a controlled temperature, beginning at 14ºC and ending at 17.5ºC, a process that lasted three weeks. After this process, the wine was sulphited but it was kept on its lees for a month, obtaining a greater volume in the mouth, at which time it was racked and cold stabilized in order to be bottled.

Tasting Notes Muñarrate

Bright, straw-white color Nose: Fresh, intense. Without moving, hints of freshly cut hay, when moving, nuances of fennel and laurel appear, with a mineral background, accompanied by hints of citrus. Mouth: The first impression is of kindness, unctuous, glyceric, with multiple flavors of white fruit, pear. The aftertaste is happy, with a refreshing finish.

To make Quintaluna we use grapes from a wide representation of small vines in various municipalities in the north of Segovia: Nieva, Aldeanueva del Codonal, Aldehuela del Codonal and Santiuste de San Juan Bautista. They are planted in sandy soils, with a high codon content. Most of it is a very old, pre-phylloxera grape, standing frank that is preserved thanks to the fact that the sandy soils prevented the attack of the plague of the late nineteenth century and, to a lesser extent, to a younger, selected and low performance.

Tasting Notes Organic green caraballas

On the nose it is complex but very refined in its forms, reminiscent of grandmother's homemade compotes, ripe pineapple, freshly cut grass and talc. All perfectly pasted and harmonized by a citrus peel background.This aroma evolves giving floral notes reminiscent of wild white flowers and infused chamomile. Although it is slightly glyceric in sight, it is in the mouth where it makes a big difference and makes it a true elixir. Its weight and packaging do not go unnoticed, providing tactile sensations in all the cardinal points of the mouth. In the aftertaste a slight and elegant bitterness.

Finca Montepedroso has an area of 25 hectares dedicated to the Verdejo monoculture, with a plantation age that ranges from 7 to 31 years. Located on a plateau at 750 meters of altitude, the farm has three types of soils characteristic of a region located in the central sector of the depression that forms the Duero River: alluvial soil (stone pebbles) that crowns the plateau and supposes the largest area of payment (70%); a clay soil in a ravine, with a slope of 10% where the oldest vineyards (31 years) are buried; and a soil with a large amount of silt and clay sediments, also in ravines and with slopes of up to 20%.

Tasting Notes Finca Montepedroso

Color: Lemon yellow with frosted green sparkles, clean, bright and with a very glyceric tear.Nose: Clean and frank aromatic complex, of high intensity where the notes of apricot, peach, fennel, green almond shell, anise and fruit stand out. fresh (lychee, grapefruit, green apple). Reminiscences of freshly cut hay and light hints of smoke mixed with mineral notes.Taste: Velvety and silky on the palate with development towards a large volume and structure.The balanced acidity gives it freshness and nerve. Viura grapes from Finca Iscorta planted more than 50 years ago, harvested by hand in 15-kilo boxes to avoid any type of breakage, oxidation or fermentation prior to entering the winery. Next, they go through a selection table where those that do not exceed the highest quality are eliminated, thus achieving that the grains arrive whole to the press. Once in the press, and after a smooth draining, we obtain a must with great complexity that will end up in new American oak barrels, where it will carry out the alcoholic fermentation for a month, receiving daily battonages to obtain a well-structured wine. After fermentation and after a racking, it will remain 2 more months in the same barrel before being bottled to achieve the desired balance between fruit and wood.

Tasting Notes Chobeo fermented in barrel

Clean in color and bright, straw yellow with golden highlights. The tropical fruit that predominates over toasted notes stands out. Complexity of aromas, honey, banana, pineapple in combination with scrubland. In the mouth it is creamy, creamy, white fruit with cereal points, light acidity, long and enveloping aftertaste.
